Existing plant-based technologies cannot recreate the distinct texture of shellfish from plant proteins so manufacturers of plant-based products have relied on starches such as konjak at the expense of protein and nutritional content. Our process allows us to create the look and feel whilst benchmarking on the protein content and nutrition of a native shrimp.
